Problems setting up mini 5 pro

Afternoon everyone,I’m just on with setting up my mini 5 pro,I set the country to United Kingdom,go to next stage WiFi,then time zone,theirs is no UK time zone,I then go back to country & it’s reverted back to United States,can anyone help,or am I’m missing something..?

@Andy_H - Try configuring the time zone to Europe/London or Europe/Lisbon - the important thing is that its GMT/UTC +1
